Cut off stem and leafs of each 1 fresh cauliflower.
Wrap in Saran Wrap (best done in microwave). Or steam in microwave container. If in wrap, microwave for 6 minutes. Carefully turn upside down (hot!!) and microwave for 3 more minutes. Let cool. Cut into very small flowerettes. Set aside.
8 oz. butter
Add 1 cup flour and cook for 2 to 4 minutes stirring constantly.
Add 1 quart chicken stock and stir with wire wisk.
Bring a slow boil and turn heat to low.
Add cauliflower pieces.
Add 12 oz. cheddard cheese (white or yellow)
1 qt. half and half
1 tsp salt
1/4 tsp white pepper
Heat through (do not boil)
