Absolutely delicious low calorie option for tatie tots.
Rice Cauliflower:
Place cauliflower florets into blender and cover with cool water. Pulse blender just until cauliflower is the size of rice. Thoroughly drain cauliflower and place in microwave safe bowl.
Cook Cauliflower:
Add finely diced onions to Cauliflower. Cover and microwave for 12 minutes, stirring halfway through. Remove lid from cauliflower and allow to cool slightly until mixture can be handled comfortably.
Preheat oven to 350 degrees.
Cover a cookie sheet with foil and generously spray with cooking oil.
Mix remaining ingredients in with cauliflower. Form mixture into 36 tater tot shapes. Place onto prepared pan.
Bake for 15 minutes, then turn tots over and continue cooking 15 minutes more until browned.
Serve hot with ketchup.
