CCheryls Moist Bread Machine Cornbread

This is the Best Corn bread to come out of my Kitchen!

Ingredients

1 cup cornmeal

1 1/4cup flour

4 teaspoons baking powder

1/2 cup sugar

1 teaspoon salt

1 teaspoon vanilla

2 eggs lightly beaten

1 cup milk

1 1/2 cup instant mashed potatoes (cooked) (cooled

1/2 cup melted butter or oil


Directions

Follow the instructions that came with your bread machine in terms of which ingredients to put in the machine first. Make sure that you set your bread machine to quick bread setting or cake setting, and just start your machine after all ingredients are placed in there, close the lid and when it beeps its done, about 1 hour and a half in my bread machine. Enjoy!

Did a few tweaks to suit a more Aussie palate. Less sugar, less vanilla. Had trouble with the mash not mixing so next time will mix the mash with the milk before putting in bread maker. Other than that beautifully cooked, brown and gold

I used the quick bread setting on my breadmaker. This is the 1st time that I've pulled bread out of this breadmaker that was raw in the middle! Moist? Yeah, a little too moist as it was raw. It took an hour and 30 minutes from start to finish. The outside crust of the bread was very salty, that's never happened with any other bread recipe. My hunt continues for the perfect breadmaker corn bread recipe as I need it for making cornbread stuffing tomorrow.

Can this recipe be baked in the oven rather than the bread maker?

Awesome super moist! I used leftover mashed potatoes & baked it @350 for about 20 min. in a cast iron skillet. (My bread machine is older, doesn't have the quick setting.) BTW if you use regular mashed potatoes, make sure they have no lumps. Children will find the lumps. Just Sayin'

Tried this corn bread last nigh for dinner with chili and it was soo good definitely a keeper for me. I did do something different I used the oven because I don't have a bread maker but still tuned out great
