Suggest a better description1. Melt earth balance in a Dutch oven over medium heat. Add onions, garlic and celery and celery root, cook 10-15 minutes, stirring often until celery root is tender. Add broth, bring to a simmer. Cook for 10 minutes.
2. Place ΒΌ portion of mixture in blender. Secure blender lid on blender. Process until smooth. Repeat procedure with remaining celeriac mixture.
3. Return soup to pan over medium heat; stir in half-and-half, pepper and sea salt. Cook for 5 minutes. Serve with garnish.
