Bring all ingredients, except the cream, to a boil in a large stock-pot.
Reduce to simmer and skim impurities off the top.
Simmer for 20-30 minutes until vegetables are tender.
Mix with a hand blender and stir in cream.
Return to pot and reheat if necessary.
Season to taste.
