In a bowl, soak dried mushrooms in warm water and chop
In another bowl, soak cellophane noodles until soft then cut into 1-in lengths
In a medium bowl, combine mushrooms, noodles, pork, green onions, carrots, eggs, crab, salt and pepper. Mix well
Sprinkle rice paper warppers with water to moisten. Lay them on a work surface to soften
Put a tablespoonful of filling mixture about 1 inch from the bottom edge of the wrapper. Fold the bottom of the wrapper up over the filling mixture. Fold the sides in and smooth the rice paper. Roll the wrapper very tightly.
Continue making rolls with the remaining wrappers.
In a large skillet, heat 1/2 inch of oil over medium high heat. Fry rolls until golden brown, turning once. Drain on a paper towel.
Serve with prepared fish sauce, lettuce and herbs.
