Mix until ready to knead, adding more flour until mixture is no longer sticky (total of 6-7 cups of flour).
Preheat oven to lowest setting, & then turn OFF when you put the dough in. Oil large bowl place dough in & turn over to coat with the oil. Cover with a cloth & let rise in oven for 2 hours.
After rising, punch dough down. On floured surface divide in half ( or 3rds if you want 3 loaves). Divide each half (or 1/3) into four equal parts. Roll each of the four pieces 12-18 inches long, then braid. Start at far left over two, under one until loaf is braided. Do the same with the second & third half to make a total of three loaves.
Put each loaf on a greased cookie sheet. Using 1 whole egg, brush the top of each loaf until coated with egg.
Let loaves rise for 15 minutes. Bake at 325 degrees. Bake 15 minutes then switch racks & redcoats with remaining egg wash. Then bake 15 minutes more.
