Champ is simply masshed potatoes with more than the usual allotment of butter and added scallions. They are made lighter in this recipe by processing through a ricer or food mill. Total Prep / Cook time 1 hr.
Put the potatoes in a pot of cold water and bring to a boil. Reduce the heat and cook for 20-25 minutes until very tender. Drain thoroughly and return to the pot. Cover and continue to evaporate moisture by shaking the pot continuosly for a few minutes.
Put the potatoes through a ricer or food mill and mix in the butter, salt, pepper. Keep warm.
Put the scallions in a saucepan w/ just enough milk to cover. Bring to a boil and cook for 1 to 2 minutes. Mix the scallions and milk w/ the potatoes. Adjust the seasonings and serve immediately.
