In a skillet heat olive oil over medium/low heat.
Add pancetta and shallots, cook until shallots are tender. (3-5 minutes)
Add mushrooms, tomatoes and butter.
Add nutmeg, oregano, thyme and salt and pepper.
Continue to cook until mushrooms are tender (2-4 minutes)
Add garlic and cook another minute.
Add heavy cream and bring to simmer, reduce heat and simmer until it starts to thicken (2-4 minutes).
Remove from heat.
Prepare your favorite pasta
Spoon sauce over pasta, grate cheese and optional truffle over plate.
