A tasty sweet Chinese BBQ...Excellent for Pork and Poultry!
1. Trim the fat from the pork and cut into chunks; each chunk should be between 2 to 4 bites a piece. You may also use boneless chicken thighs, leave the skins on, it will add to the flavor.
2. Blend all remaining ingredients.
3. Pour half of the marinade over your pork or chicken and rub the marinade into the meat...for my island locals..."lomi the meat"! Ensure that the pork or chicken is fully covered by the marinade. Then marinate overnight in refrigerator.
4. Place the reserved half of the marinade into a pot; boil on low heat to thicken. You will use this marinade to bast while grilling your pork or chicken. You may use the red food coloring to adjust the coloring. After thickening, let marinade come to room temperature and then place into refrigerator until ready to grill.
5. When ready to grill, drain marinade from pork or chicken in order to eliminate excess moisture.
6. As you are grilling use the basting marinade to coat the pork or chicken. Grill until the pork or chicken is completely done.
If you are unable to find the Noh's Seasoning, add 1/2 teaspoon of Chinese Five Spice to the above recipe.
If you can't find Lee Kum Kee Soy Sauce, use a really dark soy sauce, remember this is a salty ingrediant so you wont need to add salt to this dish.
I also recommend using a really dark colored honey or even a maple syrup.
Make sure you use a really dry white wine that is of good quality. When it comes to using alcohol in cooking remember if it isn't good enough to have a glass to drink, it isn't going to be good enough to cook.
