Charlie’s Wild Rice Dressing
2 pkgs. Uncle Ben’s Wild Rice
1 cup Pepperidge Farm Stuffing Mix
1 cup celery, CHOPPED
1 large onion, CHOPPED
1 (4 ½ oz) bottle sliced mushrooms, DRAINED
1 lb. “HOT” sausage
Salt and Pepper to taste
Cook giblets in 2 cups water on “low” setting for 2 ½ hours. Add liver last 30 minutes of cooking time.
Cook wild rice according to package directions.
Brown sausage in 2 tbsp. margarine, then drain.
Mix sausage, rice, onions, celery, and mushrooms in a very large bowl.
Cut up giblets, add to mixture.
Add stuffing (should end up light and fluffy) - do not pack.
Add salt and pepper.
Pour into oblong dish.
Pour drippings from turkey over the dressing to give moisture.
Bake at 350? for about 30 minutes.
Actually, this can be made without giblets.
Chicken broth can be used in place of turkey drippings.
