Suggest a better descriptionSoak beans overnight in the water (or use Instant pot and skip overnight soak). The next (or same) day, cook the bacon in a stockpot over medium-high heat until crisp, aout 6-8 minutes. Add the onon, garlic and jalapeno and cook for an additional 5 minutes. Stir in the cumin, chili powder & salt and cook another 1 minute. Add 1 cup of soaking bean liquid and scape all the goodies off the bottom of the pot. Add the beans and remaining water, bring to a rapid boil. Decrease heat to medium-low and simmer for 1 1/2 to 2 hours until beans are soft or if using Instant Pot simmer for 20-30 minutes to marry the flavors. Keep warm until ready to serve or cool and refrigerate up to 3 days.
*Instant Pot beans - Place dried beans in pot, add 5 1/2 cups water and manual cook for 45 minutes, quick release pressure. Add some of the liquid to deglaze the stocktpot, then add remaining water and beans
