In stock pot, combine first 7 ingredients. Bring to boil then reduce to simmer. Cook until beans are almost tender (60 minutes) adding water as necessary to ensure that beans remain somewhat soupy
In a separate pan, fry bacon until almost crisp. Add onion and cook til almost translucent. Add garlic and cook until fragrant. Add chipotle, tomatoes & japs if desired.
Add tomato mixture to beans and simmer for 20-25 minutes. Add cilantro & allow to sit for 5 minutes before serving.
Total time takes about 90 minutes to cook beans
