In a large, tall pan, cover the chicken with water. Add salt and pepper. On high heat, bring to a boil and cook for about 10-15 minutes, or until the chicken is done throughout and falls off the bone. Turn the heat down to medium. With a ladle, remove the chicken from the water and set aside. Add the chicken broth, milk, salt, pepper, and butter to the water and simmer. Meanwhile, take the cooked chicken to the sink and, with impeccably clean hands, remove the skin, bones, gristle, and as much fat as you see, using cold water to cool the chicken to touch. Be careful as the bones will still be very hot. Dice or shred the chicken into bite size pieces. Add the chicken back to the broth mixture. Allow it to heat back up. Meanwhile, prepare the dumplings as directed on the Bisquik package. Season to tase. Make sure the broth and chicken mixture is hot but not boiling. Add dollops of dumpling mixture to the broth with a large spoon (a tablespoon for smaller dumplings; a large stirring spoon for bigger dumplings). Cooking time depends upon the size of the dumpling, but do not overcook or cook too quickly - that will make the dumplings heavy and tough.
Serve with a vegetable (we prefer green beans ) and, optionally, with mashed potatoes or rolls and butter (not a good idea to serve both as that makes this a very starch-heavy meal).
You can make the dumplings as complicated or as easy as you want. Using a few cans of Grands-style butter-tasting (but not honey butter) canned biscuits works pretty well. Cut each biscuit into 3 or 4 pieces. Or you can make dumplings from scratch with your own flour, shortening, milk, eggs, seasonings, etc.
