Have fun with this recipe. Play with your choice of spices. I used Old Bay Seasoning as a goto because it is easy to obtain but you can try any type of unique seasoning blends to add your own touch. You can even substitute the garlic powder and only use Old Bay or spice blend, which I have done with great success. Another fun trick with these biscuits is that by melting the butter then pouring into the cold buttermilk, you get lots of chunks of solid butter that eliminate the need for cutting and blending cold butter into the flour with your hands or dough/pastry cutter. Saves time and messing fingers!
Preheat your oven to 450 degrees. In a large bowl, combine the flour, sugar, baking powder, salt, garlic powder, old bay seasoning and chipotle powder and mix well. In a separate bowl, combine the buttermilk and melted butter. Using wooden spoon or other strong stiff spoon stir just to combine the ingredients well but do not overmix. Fold in the cheese. Using a 1/4 cup measuring cup, scoop the mixture onto a baking sheet lined with aluminum foil and sprayed with cooking spray, or a silicone mat (still spray the sides of the sheet). A 1/4 size baking sheet works very well to lay out 12 biscuits with enough spacing to bake together and close, just the way a good biscuit should rise! Bake for 12-15 minutes until desired level of brownness on tops. While the biscuits are baking, place the garlic and butter in a microwave safe bowl and melt for 1 minute.
