A new thing for some delicious breakfast biscuit
1) Preheat oven to 350*F. Combine the flour, baking powder & salt in a large bowl. Using your fingers or a pastry blender, rub the butter into flour mixture until coarse crumbs form.
2) Add 1/2 cup buttermilk & half of the cheddar to the mixture in the bowl. Mix until a soft dough forms. (If the dough is too moist, lightly knead in small amounts of extra flour until the dough holds together, taking care not to overwork the dough.)
3) Turn the dough out onto a lightly floured surface & roll to a 1/2-inch thickness. Use a 2-inch round cutter to cut out the biscuits. Re roll trimmings & cut the remaining dough if necessary.
4) Place the biscuits on a large baking sheet. Lightly brush the tops with the remaining buttermilk & sprinkle with the remaining Cheddar. Bake the biscuits until golden.20-25 minutes.
