Combine flour, cornmeal, sugar, baking soda, salt, cayenne and pepper flakes in a large bowl, stirring with a whisk. Cut in butter with a pastry blender until mixture resembles coarse meal. Add cheese, water and vinegar and stir until mixture just comes together. Divid dough into 4 portions, shaping each into a ball. Wrap each ball in plastic wrap and freeze 30 minutes.
Preheat oven to 375.
Roll each ball into a circle on a lightly floured surface. Roll as thin as you can. Score with pizza cutter, place on baking sheet and sprinkle with 1/2 teaspoon seeds.
Bake about 10 minutes. Cool completely, separate into wedges.
