A great twist on a traditional buttermilk biscuit. Feel free to change up the cheese or herbs to suit your tastes.
Pre heat oven to 400F. Place cheddar cheese into the freezer. In a large bowl, mix together flour, baking poweder, baking soda, kosher salt, thyme, sage, and chili powder. Grate the frozen butter in a food processor using the grating disk. Remove cheese from freezer and grate in food processor as well. Add butter and cheese to flour mixture, folding to combine. Add buttermilk to flour/cheese/butter mixture and stir to just combine. Pour out onto floured cutting board and knead until mixture is just combined and holds together. Roll dough out to a 1/2 inch thickness. Cut with a biscuit cutter and place on a cookie sheet. Bake 10-12 minutes or until biscuits are golden brown.
To make topping: Heat butter in a small pot over low heat. Add garlic powder, onion powder, salt and pepper. Remove from heat when butter begins to boil and brown. Brush butter topping over biscuits after you remove them from oven before they cool down. Go lightly on the butter topping, or you will make the biscuits soggy.
