Suggest a better descriptionPreheat oven to 350 degrees. Trim crust from bread and roll each slice flat. In a small bowl, combine 1/4 cup of sugar and cinnamon. Set aside. In a large mixing bowl, beat softened cream cheese , egg yolks, 1/2 cup sugar, and vanilla until smooth. Spread this mixture onto each slice of flattened bread. Roll bread slice up. Dip each roll in melted butter, then roll immediately in sugar-cinnamon mixture. Cut rolls into 1 inch pieces. Arrange the blintzes on a greased cookie sheet. Bake for 10 minutes.
