475 degree oven. Place pan filled with 1/2" of water in oven.
Mix crumbs, cinnamon and add melted butter.
Press mixture to form crust onto the bottom and 2/3rd of the sides of a 9" Springform pan lined with parchment paper.
Wrap aluminum foil around bottom of pan.
Freeze until filling is prepared.
Put cream cheese, sour cream and vanilla extract in mixer. Blend until smooth and creamy. Scrape down side of mixer.
Whisk eggs in a bowl. Add cream cheese mixture. Blend until eggs are incorporated.
Remove crust from freezer and carefully pour in filling.
Place cheese cake into pre-heated water bath.
Bake 12 minutes.
Lower oven to 350 degrees and bake until top of cheese cake turns golden color. (50 to 60 Minutes)
Remove cake to a wire rack and cool.
