Melt the butter in a saucepan over a medium heat and add the flour stirring continuously for 2 minutes to make a roux. Remove from the heat and gradually whisk in the milk or beer, return to the heat cooking gently for 3-4 minutes.
Remove the pan from the heat and add all the other ingredients except the bread and coriander. Return to the heat and stir until thickened. Remove from the heat and stir in the coriander and check seasoning.
Toast the bread, dollop on the mixture and grill (broil) until golden and bubbly.
