Coarsly grate cheese and toss with flour. Rub skillet or chafing dish with garlic. Pour in wine and place over low heat or set skillet at 300 degrees. Heat until wine starts to boil. Gradually add cheese stirring constantly with wooden spoon after each addition. Reduce temperature to 230 degrees and continue cooking stirring constantly until mixture is thoroughly blended. Add nutmeg, salt, pepper and kirsch. Heat and serve bubbling hot.
