Suggest a better descriptionMake filling: in top of double boiler over hot water combine flour, mustard, salt, pepper, amd milk, stir until smooth.
Add 2 cups cheese and the onion; cook, stirring occasionally 15 to 20 minutes or until mixture thickens and cheese is melted.
Remove from heat. Keep warm over hot water.
Make 4 omelets, one by one. In omelet pan or skillet with heat assistant handle.
Before pouring into pan, add 1 tablespoon cheese to each.
Just before folding each onelet place 1/4 cup filling in omelet. Fold in thirds, sprinkle each with 1 tablespoon cheese.
Run under broiler 6 inches from heat until cheese is bubbly and golden-about 1 minute.
Wla lift out onto with spatula lift out onto serving plate. Keep warm until serving.
