2. Add unbeaten eggs one at a time, beating one minute after each addition
3. Add grated cheese and beat until thoroughly blended
4. Heat milk 30 seconds in microwave
5. Add sugar and salt to heated milk and stir to dissolve
6. Sprinkle yeast over milk and stir to wet
7. Cover and proof yeast ten minutes
8. Add proofed yeast to cheese mixture
9. Sift together flour and mustard
10. With mixer on low, gradually add flour mixture
11. Drop by teaspoons, two inches apart, on greased baking sheets
12. Cover and let rise until doubled in bulk (about one hour)
13. Heat oven to 375
14. Brush puffs lightly with beaten egg white
15. Bake 20-25 minutes or until golden
