Suggest a better description1. Trim stem off artichokes, rinse and steam on high heat for 20 minutes (25 minutes if large artichokes)
2. Remove artichokes from steamer and allow to cool for a few minutes.
3. Cut the artichoke in half from the top of the artichoke down toward the heart and stem stump.
4. Remove the "choke" fibers by carefully cutting into the artichoke heart where the fibers connect to the heart. This will allow you to scoop out the fibers and the tougher to eat petals nearest the artichoke heart.
3. Scoop out some of the little petals around the choke area to create a little pocket or reservoir for the cheese sauce. (These petals are usually tough to eat.)
4. Lay artichoke halves on a baking pan with the pockets facing upward and manipulate the petals to open a little space in between them.
5. Set artichoke halves on the side.
6. Place remaining ingredients (except bread crumbs) into a small sauce pot and set it on medium high heat.
7. Preheat oven to bake at 400 degrees.
8. Allow sauce to come to a low boil and reduce heat.
9. Stir sauce and allow to simmer until all cheeses have melted together, sauce should have a thick consistency.
10. Careful spoon or pour sauce into the artichoke half pockets. Liberally spoon or pour remaining sauce (if there is any) in the spaces in between the artichoke petals.
11. Sprinkle bread crumbs over artichoke halves, covering the cheese sauce pockets.
12. Bake halves for 10 minutes or until bread crumbs have toasted to a brown color.
If cooking more than 1 artichoke, you must scale up the cheese sauce ingredients but there is no need to double the quantities. For example, 1.5 cup of heavy cream, 1/3 brie wheel, 1/2 cup of Parmesan, 1 cup of cheese, 1 tablespoon butter and 1 teaspoon of lemon juice, will produce enough sauce for 2 good sized artichokes.
