Mix ingredients for crust and line bottom of 9" spring form pan or 12 x 9" pan.
Save a 1/4 cup of mixture for top of torte.
Beat cottage cheese until creamy.
Add sugar, eggs, salt, lemon juice, cream & flour.
Almond extract may be added
Pour mixture into crust & sprinkle with remaining graham cracker mixture
Bake 1 hour at 350 degrees
Turn off heat and LEAVE IN OVEN until cooled.
