Easy and a great "make ahead" dish, too!
Cook Tortellini as directed (usually only gets boiled 2-3 mins); they should be tender but not too soft. Drain but don't rise. Pour into an 8x8 square ovensafe dish.
Whisk marinara and ricotta. Test for taste- you may need salt, pepper, oregano, thyme, and/or basil.
Pour sauce mixture over pasta. Top with cheeses.
Cover w/ foil and bake immediately or store up to 3 days.
Bake at 350 degrees for 20 mins. Remove foil and continue baking 10-15 mins. or until cheese melts.
