If using spiralized sweet potatoes: Peel potato, cut ends off, and spiralize (blade C or D). Using a large pan, add raw spiralized potatoes to medium-high heat and fry for 5-7 minutes with a little bit of cooking spray.
If using whole potatoes: Peel potato and poke several holes in it with a fork. Microwave 4-5 minutes in a damp paper towel. Remove from heat and dice into 1/2 inch cubes. Fry for 5-7 minutes with EVOO.
In a separate large pan, cook the next portion of ingredients on medium-high until done, roughly another 5-7 minutes (from meat until chili powder).
Layer all ingredients in the order listed (Sweet Potatoes, Meat Mixture, Mozzarella, Lettuce, Tomatoes, and Avocado). Drizzle with Ketchup and Mustard.
