Brown beef and onion
Add broth, shredded carrots, and potatoes.
Dice garlic cloves and add to broth.
Boil, then simmer for approximately 10-12 minutes or until potatoes are tender.
Add 1/2 teaspoon of cayenne pepper to mixture (more to taste - 1 1/2 teaspoons recommended).
In a saucepan, melt butter and stir in flour. Then add milk and stir until smooth.
Add milk mixture to soup, stirring consistently. Once boiling, reduce to a simmer and stir in cheese (can add more than 1lb to taste). Do NOT bring mixture with cheese to a boil.
Cook complete mixture until ready to serve.
