Preheat oven to 325
Combine graham cracker crumbs, 3 tablespoons sugar, butter and press into 9" round spring form pan
Beat cream cheese, 1 cup sugar, and vanilla with mixer until blended
Add eggs one at a time, mixing on low just until blended
Pour over crust and bake 55 minutes or until center is almost set
Run knive around rim of pan to loosen
Let cool before removing rim, refigerate 4 hours
