Delicious and warming and so simple to make!
Preheat the oven to gas mark 5/190C/170C for fan oven.
Cut chicken in to cubes or strips. Coat in plain flour and a bit of black pepper. Press the garlic and slice the leeks in to thin slices.
Heat some cooking oil in a large frying pan. Add the chicken and fry gently until it begins to seal. Once sealed, add the leeks and garlic and continue to cook gently until the leeks are soft.
Add the milk to the pan and cook for 2-3 minutes until the milk thickens in to a sauce. Add 75g of grated cheese and stir through. Remove from the heat.
Tear up slices of bread and add to blender. Blend in to breadcrumbs. Add mixed herbs and remaining grated cheese and mix together.
Add chicken and leek mixture to a Pyrex dish/baking dish. Cover with the cheesey breadcrumb mix. Put in oven for approximately 20 minutes (until bubbling and crumb top is golden brown).
Serve with your choice of vegetables. Enjoy!
The cooking time will vary by oven. The recipe I originally adapted this from suggested 15 minutes, however I found 20-25 minutes was better (different each time I've done it) as the topping hadn't browned after 15 minutes.
