Mashed Potato Egg Pockets
Prepare potatoes as directed on package or warm up leftover mashed potatoes. Stir in onion if desired. Spay pie iron well with Pam on both sides. Spread a spoonful of potatoes in greased pie iron; about 3/4 ways up. Make a depression in the potatoes large enough for an egg to fit. Sprinkle grated cheese in depression. Break egg into depression.
Sprinkle with salt, pepper and bacon. Cover pie iron and cook over a slow fire until egg is cooked the way you like. I like to start heating the potato side first then flip to the egg side. It is best to keep flipping from side to side until the egg is cooked. To serve; slide potato pocket onto plate and sprinkle with additional cheese if desired.
