Great as a veggie dish; add rotisserie chicken for a protein option.
1. Preheat oven to 350°F.
2. Cook/steam rice and broccoli per directions.
3. Mash/break steamed broccoli into smaller pieces. In a Ziploc bag, grind/crush potato chips into crumbs.
4. In 9x11x2 casserole dish, mix broccoli, 2 bags of rice, 1 can of onion soup, and 1/3 cup of water (poured into soup can to rinse out soup).
5. Then mix in remaining bag of rice, remaining can of soup, another 1/3 cup of water (used to rinse out soup can), 2/3 of each bag of cheese, and some of the crushed potato chips (to taste). Add more water if necessary to keep mixture moist.
6. Crumble the remaining crushed potato chips and remaining cheese over the top (to taste).
7. Bake for 45 to 50 minutes until cheese on top is melted and casserole is bubbly.
