1. Heat a frying pan over medium heat. Add your chicken breasts and fry off for a couple minutes until golden, crisp, and tender. Remove from the pan
2, add half of the butter to the pan. When melted, add your onion and fry for 5-10 minutes until soft and starting to caramelize.
Add at the garlic and cook for a minute.
3. Add the rest of the butter into the pan and once melted, add your flour. Cook out 2 minutes then gradually add milk in small increments, whisking all the while until you have a smooth sauce.
4, Once alll at the milk has been added, bring to a boil and simmer for 2 minutes until thickened. Add your cheddar, mozzarella, nutmeg, salt and pepper. Sstir until cheese melts.
5, Add your chicken back to the pan along with your broccoli and stir.
6. Mash your cooked potatoes in a ricer or with a potato mashers.
7. Stir in sprigs of onion , cheddar and salt until totally combined. Take a handful and roll into tennis ball size. Then repeat with remaining potatoes.
8. Pour your chicken and broccoli mixture into a dish and top with your potato balls. Lay your mozzarella slices over the top, then bake for 25 minutes at 350 degrees.
9. Sprinkle with choices and serve.
