Suggest a better descriptionCook rice according to package directions and set aside. Pre-heat oven to 375 degrees F. In a large skillet add 2 teaspoons of extra virgin olive oil and heat on medium high. Add the broccoli and sauté for 5 to 7 minutes or until broccoli is just tender. Add chipotles, adobo sauce and sour cream and stir until ingredients are thoroughly mixed and heated through, 3 to 5 minutes. Add hot rice and stir. Season with salt and pepper to taste. Put rice mixture into a 9-inch-by-13-inch casserole dish and spread out evenly. Top with cheese. Put in oven and bake for 15 to 20 minutes or until cheese is completely melted.
