Divide the lettuce and cucumber between 2 plates
Heat the olive oil in a medium-sized non-stick frying pan over a med-high heat.
Break the eggs into the pan, sprinkle with salt and pepper then cover and cook for 2mins.
Remove the lid and place the cheese over the egg yolks then cover and cook for another minute.
Serve on cooked lettuce
