A casserole of greens (collard, kale or chard), mushrooms, and ricotta cheese.
Preheat oven to 375*F.
In a large pot of boiling, lightly salted water, cook greens until tender, about 3 min. Drain and shake dry.
In a large skillet, melt butter over medium heat. Saute mushrooms and garlic.
Remove from heat and stir in cooked greens, egg, ricotta and 1/4 cup of the Parmesan (save the rest for the next step).
Pack in casserole dish. Sprinkle with bread crumbs and remaining Parmesan.
Bake for 35 minutes, until browned and bubbling.
