Do-aheads:Thaw and chop ham
Thaw or Parboil and chop mixed veggies
Chop onions.
Put Bacon Bits, ham, potatoes, and chopped mixed veggies (NOT onions) in the crock pot.
In a large soup kettle, cook the onion in butter until tender. Stir in flour and pepper until blended. Gradually add bouillon, milk and water. Bring to a boil; cook and stir for 2 minutes or until thickened. Add to crock pot and cook on low 4 to 8 hours. Add cheese during last half hour.
