PREHEAT OVEN TO 350 DEGREES. GREASE A 9 x 13 CASSEROLE DISH
In a large bowl, stir together the corn, sour cream and egg. Mix in the onion, jalapenos, garlic powder, paprika, salt, butter, cornbread mix and 1 cup of shredded cheddar cheese.
Pour into the prepared casserole dish.
Bake for 30 minutes and then add the remaining cheese to the top. Bake an additional 15 to 20 minutes, or until the middle has a SLIGHT jiggle.
