Preheat the oven to 375. Greese a nonstick muffin pan with cooking spray
In a large bowl stir together the mashed potatoes eggs ¾ cup of cheese a ¾ of the chives. Season with salt and pepper.
Scoop the potato mixture evenly into the muffin tins, packing the potatoes down and make well.
Bake the muffins for 30 – 35 mins until golden brown and crisp around the edges.
Top with rest of cheese and rest of chives and cook for 10 min or until cheese is melted
Top with sour cream serve
