These are my mother’s best mashed potatoes. Everyone loves them.
Cut potatoes and boil until tender. Mash with potato masher. Add butter and evaporated milk. Mix well with an electric mixer. Add salt and pepper to taste. If potatoes are too stiff, add more milk and whip again.
Put into casserole dish. Cut up some Velveeta into pieces and stick some down into potatoes. Cover them with potatoes. Then add some Velveeta slices to the top. Bake at 350 until cheese is melted.
