Prepare rice per package instructions. (Minute rice doubles when cooked, so you need 1 1/2 cups dry rice & 1 1/2 cups boiling water.) Cook vegetables in covered dish in microwave for 15 minutes.
Combine all ingredients in Crockpot. Mix well and cook on high until cheese have completely melted. Reduce temperature to low and cook 1 hours and 45 minutes, stirring occasionally.
I use a crockpot liner for easy clean-up. This dish goes over well when I take it to a large gathering, I rarely bring any home!
