Combine vegetables, soup, sour cream, pepper, and half the cheese and onions in bowl; mix well.
Spoon into 1-quart baking dish. Bake, covered, for 30 minutes.
Top with remaining cheese and onions. Bake, uncovered, for 5 minutes longer.
For added tang, mix in 2 tablespoons of chopped jalapeno peppers.
