For Shredded Zucchini: place shredded zucchini in colander. Sprinkle with a small amount of salt. Leave for 30 min. Press firmly to remove liquid
Combine zucchini, onion, beaten egg and mix. Add in Jiffy cornbread mix and seasoning. Combine.
Add in 8oz cheddar cheese and mix. Spread in pan and top with remaining 4oz cheese
Bake for 30 min until golden brown
