Peel and slice onion into 1/3 inch rounds. Brush slices with olive oil and season with salt and pepper.
Grill both sides until partially charred and just cooked through, 5-10 minutes.
Remove and chop coarsely.
Combine onions, cherries, vinegar and season with s & p in a bowl and serve at room temp.
Dump on steak, salmon, etc.
