Great cream cheese pie. Holidays are just not the same without my mom making this delicious tradition.
In a large bowl, beat cheese until fluffy.
Gradually beat in sweet condensed milk until smooth.
Stir in Lemon juice and vanilla.
Pour mixture into chilled crust.
Chll 3 hours or until set.
Top with pie filling before serving.
Other Topping Options:
* Fresh strawberries
* Banana slices dipped in lemon juice
* Fresh Blueberries
Arrange on top of chilled pie

*Ambrosia
In small saucepan combine 1/2 cup peach preserves, 1/4 cup flaked coconut, 2 tablespoons orange juice or orange-flavoured liqueur and 2 tablespoon cornstarch, cook and stir until thickened. Remove from heat. Arrange fresh orange sections over top of chilled pie. Top with coconut mixture. Chill for 1 hour more.
*Blueberry
In medium saucepan combine 1/4 cup sugar and 1 tablespoon cornstarch, mix well. Add1/2 cup water, 2 tablespoon Lemon juice, 2 cups fresh or frozen blueberries, mix well. Bring to boil; reduce heat and simmer about 3 minutes or until thickened and clear. Cool 10 minutes. Spread over chilled pie and chill for 1 hour more.
*Cranberry
In medium saucepan combine 1/3 cup sugar and 1 tablespoon cornstarch, mix well. Add1/2 cup plus 2 tablespoon cold water, 2 cups fresh or frozen blueberries, mix well. Bring to boil; reduce heat and simmer about 3 minutes stirring constantly. Cool 15 minutes. Spread over chilled pie and chill for 1 hour more.
*Banana
Prepare filling as above in original recipe but do not pour into pie crust.
Slice 2 bananas and dip into lemon juice and drain.
Cover bottom of crust with bananas.
Pour filling over bananas
Cover and Chill for 1 hour.
Before serving slice two additional bananas, dip in lemon juice, drain, and garnish top of pie with bananas.
This is my oldest son's favorite treat. He is now learning to cook and make things for himself and was surprised at how easy this was.
