Preheat oven to 325 degrees
To prepare crust, stir graham crumbs, butter and sugar together in 9" square baking pan until well combined.
Press onto pan bottom.
Bake 8 minutes or until set but not brown.
Remove from the oven and cool.
To prepare cheesecake filling, beat cream cheese in a medium bowl with electric mixer at medium speed.
Add sugar, beating until smooth.
Add eggs, yolk, sour cream, flour, and almond extract; beat until well blended.
Spread over baked crust.
Drizzle melted preserves in zigzag pattern over batter.
Drag knife tip through batter and jam to make swirled pattern.
Bake in water bath 45 minutes or until knife inserted 1" from edge comes out clean.
**For flavor variety, substitute any seedless jam for the cherry preserves. Just use vanilla extract instead of almond extract.
Mine took way longer to cook through.
