This is a delicious cross between custard and something similar to bread pudding.
Preheat oven to 350 degrees F. Combine milk, flour, half of the sugar, vanilla, almond extract, salt and butter in a blender. Blend until smooth. Add the eggs and blend again until thoroughly mixed.
Butter a small baking dish (I used a pie plate). Pour a thin layer of the batter into the dish, covering the bottom. Bake for 5-7 minutes until a firm layer begins to form on top of the batter. Remove from oven. Spread the cherries on top of the thin batter layer, and top with the remaining sugar. Pour the remaining batter on top.
Bake for 25-30 minutes. The clafoutis is ready when it is puffy with a light brown crust on top - the center still may look a little wobbly. Allow to cool slightly, then sprinkle with powdered sugar. Can serve warm or cold!
Notes: Julia Child wrote the book on clafoutis. The author of "The Garden Apartment" blog adapted her classic recipe for a smaller size. see www.virginiafoodie.typepad.com/gardenapartment. I used skim milk and it works, though not as creamy.
