1. Combine flour, baking powder, salt, and sugar in bowl, make a well in the center.
2. Combine egg, milk, oil, and vanilla.
3. Pour into the well in the flour mixture, stirring only until mixture is moistened. Do not overmix.
4. Add cherries and pecans.
5. Using a 20 scoop, pour into greased muffin pans.
6. Bake 350 convection oven 400 regular oven for 12-14 minutes.
7. Sprinkle with powdered sugar when muffins are done.
