Preheat oven to 375.
In a large bowl cream together brown sugar and butter until light and fluffy. Add molasses, egg, and vanilla and mix well. In another bowl combine flour, baking soda, salt, ginger, cinnamon, and cloves and wisk to combine. Gradually mix dry ingredients into the wet ingredients, 1 cup at a time. When flour mixture is completely incorporated, and a dough forms, cover dough and chill for 10 minutes. Place 1/4 cup sugar in a bowl. Roll two-tablespoon sized balls, roll them in sugar, and place on cookie sheet with parchment paper, 1-2 inches apart. Lightly flatten balls. Bake 9-10 minutes. Allow 5 minutes to cool on the sheet, then transfer to a wire rack to cool completely.
Makes 24-28 cookies
Amazing warm with vanilla ice cream. When taking cookies out of the oven, they will look soft. Do not overbake.
